This is my recipe for the best salmon ever! I have also included the recipes for the roasted veggies as well as the greek salad shown in the picture.
I don't use exact measurements so these are all approximations :)
I N G R E D I E N T S  (for 1) :
SALMON
1 Salmon filet
2 Tbsp. Whole grain mustard
1 Tbsp. Honey
1-2 Garlic cloves
Pinch of smoked paprika, salt, pepper

ROASTED VEG
Zucchini
Broccoli 
Olive oil
Garlic powder, salt, pepper

GREEK SALAD
Cucumber
Red onion
Tomato
Feta cheese
Black olives
Lemon
Olive oil
Balsamic Vinegar
Salt, pepper

D I R E C T I O N S :
  • Preheat oven to 375 degrees fahrenheit
  • Combine ingredients to make salmon marinade: mustard, honey, garlic (chopped up), paprika, salt and pepper.
  • Line a baking sheet with foil and coat the salmon (*lining the baking sheet with foil before cooking anything makes for easy clean-up!).
  • Cook for approx. 20 minutes or until the inside is no longer shiny.
  • While the salmon is cooking, prepare your roasted veggies so they can go in right behind the salmon.
  • Once you have chopped up and washed the zucchini and broccoli, drizzle with a bunch of olive oil and season well with garlic powder, salt and pepper.
  • Line a baking sheet with foil and place in the oven as soon as possible. Veggies will be done when the salmon is.
  • While both the salmon and the veggies are in the oven, assemble the salad. Combine chopped cucumber, chopped tomato, chopped red onion, black olives and feta cheese in a bowl.
  • Dress with a combination of  lemon juice, olive oil, balsamic vinegar, salt and pepper.

RECIPE:  H E A L T Y  P A N C A K E S!

This is my go-to healthy pancake recipe!
I don't always use specific measurements but these are the approximate amounts :)

I N G R E D I E N T S :
1 - 1  1/2 banana
1 egg
1/4 cup oats. I blend mine up to form a flour texture but this is optional
Pinch of baking powder. Also optional
Large dash of cinnamon
Pinch of salt

D I R E C T I O N S :
  • Mash banana until smooth. Combine mashed banana with the rest of the ingredients and mix together until smooth.
  • Heat up a pan on medium heat with cooking spray. Once the pan is hot, pour desired amount onto the pan.
  • Do not flip the pancake until multiple bubbles have formed on the top!! 
  • Once you see a significant amount of bubbles formed on the top of your pancake, flip it over and cook until golden. 
  • I topped mine with agave and blueberries here, but some other topping ideas are:                        maple syrup, banana slices, berries, coconut flakes, peanut butter, chocolate chips, Nutella, etc. Whatever you like!
